patchtax and son, a trio of viola, saxophone, and percussion, are performing their debut this weekend. IT’S A HIGHWAY TO HELL. Without precedent repertoire, HOW THE HELL ARE WE SUPPOSED TO PLAY TOGETHER?
The amalgamation of wood and metal parallels the complementary pairing of old and new. You say: “Birds of a feather flock together?” patchtax and son says HELL NO: “opposites attract.” This reminds us of a favorite recipe – we’d like to share it with you!

Patchtax’s Savory Apple Crisp
6-8 medium apples, peeled, cored and chopped into ½ inch cubes
2 medium onions, sliced thinly
Bunch of fresh or dried rosemary and sage, to taste
1½C shredded cheese, smoked cheddar and/or gouda
¾C all-purpose flour
½C packed brown sugar
¼tsp salt
¼tsp grated or ground nutmeg
1 stick cold unsalted butter, cut into small pieces

-Preheat oven to 350 degrees Farenheit.
-In a cast-iron pan over low heat, carmelize the onions until brown and soft.
-”Using a pastry blender or 2 knives, cut the butter into the dry ingredients until the mixture resembles coarse bread crumbs (this may also be done with a mixer or in a food processor, taking care not to blend the butter too thoroughly).” (Joy of Cooking, 75th Ann. Ed.)
-Combine chopped apples, onions, and herbs in a large casserole dish.
-Scatter shredded cheese mixture over apple and onion mixture.
-Scatter topping over the layer of cheese.
-Bake until fragrant, bubbling, and browned.
-Enjoy with with friends and lovers.
